Chocolate Molten Lava Cake


  • 3 tbs unflavored protein powder
  • 2 tsp cocoa powder
  • 1 egg
  • 2 tbs splenda brown sugar
  • 1/4 tsp vanilla extract
  • 2 tbs oat bran
  • 1 tbs skim milk
  • 1 tsp baking powder
  • dash of salt
  • 1-2 tbs sugar-free chocolate sauce


  1. Preheat oven 350 degrees F.
  2. Whisk all ingredients together and pour into a souffle cup.
  3. Bake for 15-18 minutes. (the outside rim should be cooked while the center remains very moist & melty)
  4. Pour sugar-free chocolate sauce over cake and serve while hot.

  1. I’ve made this twice and end up with a fully cooked cake. Ends up being more brownie like than lava like-any suggestion? I’ve even decreased cook time to 15mins. Flavor is awesome as usual!

    1. That’s strange.. sometimes I think my oven bakes everything slower than others. It may be because it’s electric. Anyway, I would try checking on the cake every few minutes and remove it from the oven once it gets to the gooey-center state. Good luck! Let me know how it goes!

  2. Love this, finally a chocolate baked treat that doesn’t taste “egg whitish” And has a normal texture! Since making it the first time yesterday this might be my breakfast for days to come. I was getting so tired of eggs 100 ways and turkey bacon 😉 thanks so much! I did find it cooked fully for me at minimum bake time so having no sugar free chocolate sauce I topped it with snak pak brand chocolate pudding as it is Splenda based. I took it our earlier today ( 11 mins.) and it was molten in the center but think I like it best baked with pudding seems to last longer that way 😉 yum! Your blog has been tremendously helpful.
