Ingredients:
- 4 chicken breast halves
- 3 oz fat free cream cheese
- 3 tbs fat free cheddar/mozzarella cheese
- 2 jalapeños, cleaned & minced
- salt & pepper
Directions:
- Preheat oven 375 degrees F.
- Place plastic wrap over chicken breasts and flatten with a mallet.
- Season chicken with salt & pepper on one side and flip over.
- Mix together cheeses and minced jalapeños.
- Spread jalapeno cheese mixture onto chicken breasts.
- Roll chicken and hold together with a toothpick.
- Spray cooking spray on baking sheet, place chicken, and top with more spray.
- Bake for 30 minutes.

I make something similar using Weight Watchers Jalepeno Cheese wedges (similar to Laughing Cow).
Sounds delish! I haven’t seen the the WW cheese wedges but I LOOOVE Laughing Cow. I used it in my Chicken Cordon Bleu recipe
made this the other night it was AMAZING! I used green chilis since I have a child, but I think pickled jalapenos would be great too mmm….. keep up the recipes, they are keeping me sane!

Tried this last night! So good! Just added a dash of cumin to cheese mix, and Mexican oregano ( and cilantro would be good too!). YUM! Can’t wait to eat this again and again! Thanks!
Sounds like you were able to your own twist to this. Adding cilantro would be a GREAT idea!
